I’ve come to the conclusion…..
….. that this Friday should be spent in woolly socks, a soft pajamas and with “Chili sin carne” on the menu.
Chili’s sin carne means chili without meat and it’s the vegetarian version of chili con carne. The basis of this dish is beans, and they are great with the spicy tomato sauce!
Recipe for a LOVELY Friday (for 4)
2 yellow onions
2 garlic cloves
1 zucchini
1 red bell pepper
1 tablespoon ground cumin
1 teaspoon cayenne pepper
1 tsp ground coffee
2 tbsp olive oil
1 can kidney beans, 400 g
1 can of baked beans, 400 g
2 cans crushed tomatoes, a 400g
Salt & black pepper
2 tsp red wine vinegar
1 bunch thyme
1 sprig parsley
Do this:
Chop onions, garlic, zucchini and peppers. Fry the vegetables along with spices and coffee in olive oil until it becomes golden brown.
Add the thyme, beans and crushed tomatoes and simmer 5 minutes. Season with salt, pepper and vinegar.
Finely chop parsley and sprinkle on chili before serving.
