I’ll admit it:

I was very, very skeptical to green smoothies…… how could they possibly taste good?

Friend after friend tried to reassure me that adding spinach to my daily smoothie would not affect the overall flavor, but I wasn’t so sure.

….. and then one day, I just did it. I added a few fresh spinach leaves to my smoothie, and watched it swirl into a thick, green slush…… Oh crap, what have i done?

But surprise, surprise…..before I knew it, I had slurped the whole thing down. The spinach flavor really does (almost) disappear when it’s added in small amounts. ….and it’s so healthy.

Here is the basic recipe:
1 banana
5 or 6 fresh baby spinach leaves
2 handfuls of frozen mango chunks
1 spoonful of greek yogurt
soy milk (as needed)

So, what do you think? Do you drink green smoothies?

We officially reached…..

….. a whole new level of cold…..

….. and I’m apparently mastering the art of puttering around the house in a faded, old PJ and a sad excuse for a ponytail.

This morning, I was in the mood for a fun twist to my usual cup of coffee, so I tried adding cinnamon to the coffee grounds.

So right now, I’m sipping a cinnamon-coffee concoction as we speak….. and it’s lovely!

I’ve recently been inspired…..

….. to work out in the morning before work…..

….. this happens every once in a while, and I usually don’t know what sparks the urge, but I like it.

This time I have a sneaking suspicion it might have been cause by all the Christmas food.

But anyways….. I’m feeling healthy, so whether it comes from eating right, doing something particularly active, or just simply taking care of myself….. I love the feeling. Squats and crunches, here I come!

I have a slight obsession with…..

….. balsamic….. and toasted pine nuts and I, are close friends as well. And so when I came across this recipe, my hungry little heart skipped a beat.

Petra combined this lovely chicken with Parma ham, balsamic and toasted pine nuts:

Can we say, yum!?

Do this:
Halve the Chicken fillets on the length, wrap it in Parma ham and place it in a dish with a couple of bay leaves, and sprinkled with rosemary (or thyme) and season with salt and pepper.

Pour over half and half oil mixed with balsamic (to cover half of the chicken).

Sprinkle pine nuts over.

Bake in oven 180/200 g for 30 minutes.

Serve with:
Pasta tossed in green pesto.
Oven roasted broccoli with a little oil.
Cherry tomatoes tossed in balsamic, oil and season with salt and pepper - sprinkled with toasted pine nuts.

I have planned to read the rest of secrets to happiness by Sarah Dunn.

This novel is a kind of chick lit….. and it is hilarious. I read most of it over the ski holiday, and I’d recommend it to anyone in the mood for a light and refreshingly honest story.

Yesterday I…..

….. (and the sisterhood) visited Louisiana, the Museum of Modern Art, which is located in northern Zealand with a panoramic view across Øresund.

The museum frames the sculpture park facing the sea and the interaction between art, nature and the museum architecture is quite unique.

Louisiana is an international museum with a considerable collection of modern art. The museum’s permanent collection includes more than 3000 works and is one of the largest in Scandinavia. It takes its point of departure in the period after 1945 including artists like Picasso, Giacometti, Dubuffet, Yves Klein, Andy Warhol, Rauschenberg, Henry Moore, Louise Bourgeois, Philip Guston, Morris Louis, Jorn, Baselitz, Polke, Kiefer, and Per Kirkeby.

Yesterday, we also had the pleasure of experiencing the first presentation in Scandinavia of American artist Walton Ford.

Walton Ford is a brilliant artist in the classical sense and at the same time an impressive and truly contemporary storyteller.

The majority of the sisters (translated into; all except me) was not particularly impressed, but I was gripped by his large, masterful watercolors of animals, - they are seducing and alarming….. and so full of vivid colors, bizarre clues and surreal symbolism.

This artist’s pictures have literary, historical and scientific sources, and Ford’s pictures are accompanied by quotations that form a textual counterpart to the narrative of the picture.

I just loved this one:
